I’m very short winded today. I just don’t have a lot to say and so instead of sitting at the computer waiting for words, I’ll keep it short and sweet. Plus, this bowl kind of speaks for itself…
There’s so much freshness going on here. And can we just talk for a moment about how beautiful blood oranges are??? I find them to be undeniably gorgeous and delicious to boot! They’ve been on sale everywhere I look and I’ve found myself picking them up EVERY time I go to the store out of sheer obsession. It’s like they’re just an extension of whatever else I’m putting in my cart. Side note…I’m working on an orange carrot muffin recipe to share using them since I now have an abundance in my fridge. And possibly a cocktail recipe? I’m thinking they’ll make a good beverage even better…
I’m all about the berries lately too. They’ve just been so GOOD. I’ve heard myself say more than once that the raspberries have been tasting just like pie all on their own, and they didn’t disappoint here. This bowl is the perfect way to start your day or even pick up your afternoon. It’s got tang and sweetness and the perfect amount of crunch from the granola. I actually just used broken up pieces of the homemade granola bars I made a couple weeks ago and it was perfect. I’m thinking you can literally add in any kind of toasty crunch you prefer and it will be just as good. Consider this inspiration for whatever toppings strike your fancy at the time. The possibilities are endless…ENJOY!
Fresh Fruit and Granola Bowl with Greek Yogurt and Mint
Yield 2 servings
- 2 cups plain Greek yogurt
- 1 blood orange (or any orange), thinly sliced with peel removed
- 1 cup raspberries, mashed with a fork
- 1 cup strawberries, sliced
- 2/3 cup granola
- 1/2 cup walnut pieces
- 1 tablespoon fresh minced mint
- Place 1 cup of Greek yogurt in each of two bowls. Evenly distribute the toppings over top each serving of yogurt and enjoy!
