Question here before we get started…does anyone else take their own kitchen knives and salt and pepper with a cast iron when they travel??? Everyone?? Ok, cool. Me too.
Hello Friends!!! I’ve missed being in my own kitchen creating. I’ve been creating in a different kitchen for the past 3 days because we went on an adventure! A small little adventure, but an adventure just the same and it got lots of creative juices flowing. I was really disappointed before we left, though, because I really wanted to post my latest salmon creation, but the photos were super blah (in my mind anyway) and I just didn’t feel good enough about them to share. So I’ll be working on that one again in hopes of sharing it soon because it is GOOOOOOOOOD.
Back to the creative juices…our adventure led to me deciding that I’m going to start a series on the blog called A Day in the Life and it will be focused on lifestyle type things. Little road trips (like our latest one), favorite things, super cool finds, that kind of stuff. I like to talk and share and I get REALLY excited about things so I thought it’d be fun to start sharing some of those things with you. And who knows? Maybe one of these days we’ll be talking about those things over coffee or a cocktail in my kitchen making something together…
So this cheese board…
I’m not gonna lie and tell you that I made it over and over again to test it for perfection. Come on now, it’s a cheese board. What exactly needs to be tested here? I will, however, tell you that it’s the first time I’ve put asparagus on one unless it’s been wrapped in puff pastry or something. When I made this yesterday, we had just gotten home from our trip and were starving. Like borderline hangry, tired, and irritable starving. So throwing together a quick snack was an immediate necessity. The good thing about Matt and I is that we know when each other is getting to that point, and we make a comment about it and laugh for a minute…and then EAT. This board came about because of the stops we made while we were gone (and to make us feel like we were still on vacation indulging ourselves)…
On our way back home we stopped at this fish market we’d never been in before and because Matt wanted to make up some fried oysters. The owners could not have been more friendly and before I knew it we were tasting smoked salmon dip (so good) and remoulade (amazing) and Shropshire Blue Cheese (so good we left with some). I’d never even heard of Shropshire cheese until yesterday and I’m so glad that she had us taste it because it’s become my latest cheese obsession. The way she described it was as a cheddar cheese infused with blue cheese. My favorite cheese stuffed with my other favorite cheese??? WHAT???? My mind was blown.
So we bought some along with the oysters, and ordered some fresh mussels so that I can FINALLY make the mussels provencal that I’ve been dying to share with you. And we came home, and I made this board. We’ve had asparagus and snap peas and radishes in our fridge for days now for a hot and sour soup with spring vegetables that I’ve had on the brain also for days. And we had some smoked salmon left over from our weekend getaway…crackers from another shop we stopped in and done and done. I’m thinking this is going to be a definite starter for Easter this year…ENJOY!
Quick and Simple Cheese Board with Smoked Salmon and Spring Vegetables
- assorted cheeses and dips
- assorted crackers and crostini
- blanched asparagus tips and snap peas (however many for your crowd)
- thinly sliced radishes and cucumber (however many for your crowd)
- smoked salmon
- Place all foods around the board for guests to choose from. It's as simple as that!
*To blanch the asparagus and snap peas, place them in the bottom of a small saucepan filled with 2 inches of water. Cover and bring to a boil and cook for 3-4 minutes until they turn bright green and are crisp tender. Remover from heat and run cold water into the pan to stop the cooking. Strain and serve.
