Hi Friends! Back today with a lightened up creamy frozen treat…these honey ricotta pops packed with fresh mango slices and a mix of raspberries and strawberries. The flavors are to die for, but that color?!? It makes me want to eat one while I’m writing this. And I am. Consider it a frozen smoothie on a stick…or something like that…
How was everybody’s weekend? Did you get outside at all? Yesterday it was incredible out and it makes me so happy to get the windows open and the fresh air inside. Especially when I’m working with the oven on and all that hot air is up in my face. I’m not exactly loving the ants that keep showing face from time to time in the kitchen, though, I must say. They’re fast and they creep me out. But they seem to be on their way to being gone….or will be when they take the special snack back to their lair that we succumbed to putting out for them. I’m not a fan of using it, but those little guys just don’t belong in my kitchen…am I right?
Moving on though! These pops…
These pops just sort of came to me one day last week as I was staring at the inside of my fridge, making a total commitment to myself NOT to do any more food shopping until I worked my way through the gazillion different things that I’ve stock piled on those trips to the store for ‘just one thing’. I seriously cannot go to the store for ‘just one thing’ EVER. Something is either on special or showcase or just plain looks amazing and then I HAVE to have it. And I bring it home so excited to develop something out of it, and half the time I’ve more or less added like 10 different recipes to my plate in a super short time span. As I did a couple of weeks ago. I bought a boat load of mangoes for this savory appetizer idea that I can’t wait to share with you, but I just haven’t gotten to it yet. Hence, the addition of them to these fruit pops, which ended up being awesome…
Growing up, we used to get pudding pops all the time. I remember their taste so clearly that I can take myself right back to those moments of eating a banana one like it was yesterday. There was something so distinctive about that creamy banana flavor and I absolutely loved it. You know what I’m talking about…
Since then, I’ve always been a sucker for frozen fruit flavored ANYTHING! I just love how fresh tasting anything cold and fruit related is. So of course I’m loving being able to share with you a healthier spin on those creamy pudding pops. Using ricotta here adds a certain richness, but also texture that is undeniably distinctive. The honey sweetens it up just enough, without it tasting sugary sweet and saccharin-like. And when you bite into those tangy berries and sweet mango??? Heavenly. I love having these on hand in the fridge for when I want just a small bite of something cold that makes me feel like I’m treating myself, but that doesn’t leave me feeling heavy and like I over-indulged. Oh! And when I said you could consider them a frozen smoothie on a stick? I may be known to throw them into the kids smoothies from time to time when I’ve run out of Greek yogurt….just sayin’. ENJOY!

Fresh Mango and Berry Honey Ricotta Frozen Pops
- I 1/2 cups low-skim ricotta
- 1/2 cup milk
- 1-2 tablespoons honey
- 2 teaspoons vanilla
- pinch of kosher salt
- 1 cup fresh mango slices
- 1/2 cup thin sliced strawberries
- 1/2 cup fresh raspberries
- Place the ricotta, milk, vanilla, and salt into a large bowl and mix well with a whisk. Gently whisk in the honey, and fold in the fruit.
- Divide evenly between 12 popsicle molds and freeze for 2 hours or until firm. ENOJY!
