I may be more than just a little bit excited about this, as if the all caps announcement didn’t get the point across…
This show is some serious binge watching material for me. Serious binge watching in the sense that I will run 10 miles a day with the iPad propped up on the treadmill until I finish the entire season, and will look forward to waking up at 6 am just to do so. It happens to me every year, and I look forward to it every single time. I mean, I don’t even know who’s better in that show, Kevin Spacey or Robin Wright. They’re both equally, deliciously evil, while both being somehow crazily, deceptively likeable. Anyone with me here?!? One scene I’ll be thinking ‘oh my god, I can’t believe he/she just said that!!!’, and then 5 minutes later, I’m all ‘oh my god, that was the best line ever!!!’. It’s smart, it’s sexy, and it’s completely jaw dropping material. Not to mention, Claire’s wardrobe is AH-MAZINGLY insane. I die at least twice every episode…
So it officially debuted on Netflix yesterday, but I didn’t start watching it yet because this morning I went running outside with my good friend Tracy. And then started working on some new recipes for next week, and quite Frankly (no pun intended, except for the intentional capital F), I knew that if I started watching even 10 minutes of one episode, my entire day would be shot because once you start, you just can’t stop. The trailer ALONE for this season gives me the chills…’one nation, Underwood’….so perfectly done. Bottom line guys, if you haven’t watched this show before, but keep hearing about the hype, it’s true. More than most definitely worth the watch, and be fully prepared to get addicted and uncomfortably on board with Team Underwood…
And maybe even make these sliders for your first viewing???
These guys were inspired by a Sriracha chicken slider that a local place called The Stray Dog has on their menu. I became completely obsessed with them the moment I took my first bite, however many years ago. They literally combine so many of my favorite flavors in one place, that my mind is still blown every time I recreate them. They’re spicy and sweet, and creamy and salty, and pretty much every texture and taste under the sun. And SO GOOD. For the shoot here, I actually bought pretzel rolls for the first time ever. I’ve been making them at home from scratch for so long that I never thought to try them from the store, but was always curious about how they tasted. They’re tasty! They were soft and fresh tasting, and I didn’t for a second regret not having taken the time to make my own batch. I will definitely be using them again in a pinch. Oh, and the other time saver tip here…if you don’t feel like roasting the chicken yourself, just pick up a rotisserie and call it a day. No harm, no foul. Just make these babies up and get yourself set up with some House of Cards, and … ENJOY!
Shredded Chicken Sliders with Maytag Blue, Avocado, and Hot Chili Oil
- 8 pretzel roll buns, sliced in half
- 2 2/3 cups shredded roasted chicken breast (see note)
- 1/3 cup crumbled Maytag blue cheese
- 2 avocados, pitted and sliced thin
- 1/2 cup red onion, sliced thin
- 1/3 cup hot red chili sauce or Sriracha
- shredded romaine for serving
- Set out all of the slider ingredients onto a large platter and allow diners to build their own. If serving a large crowd, double or triple the recipe. ENJOY!
To roast the chicken yourself, choose 3 large bone-in, skin-on breasts from the market. Rub generously with olive oil, kosher salt, and pepper, and roast in the oven at 375 for 45 minutes. Check for doneness, remove from oven, and shred to use as instructed.
