I’ve asked you before and I’ll ask you again….is there anything easier or more summery than fresh tomatoes with basil and burrata?!?!? Because I sure don’t think so. Take it to the next level by roasting some of them just until they burst, slathering them onto some crusty bread, and you’ve got yourself the perfect afternoon snack when those hunger pains strike…
There’s nothing fancy or inventive about this recipe. Everybody’s done it, and there’s a reason why. It’s a classic combination that wants to be just that, classic. As in, ‘I don’t need to be changed, so don’t change me’. It’s the nature of a food blogger to want to come up with new and creative recipes on a regular basis. And while that’s all well and good, its not always necessary. With something like this here, why reinvent the wheel? Let it be it’s simple, amazing self, and call it a day.
So I have a confession to make. And I’m hoping that once I make it, some more of you will come forward as well and we can start our own little support group. This isn’t easy to admit, but here goes….I have a tomato problem. In the way that I cannot resist buying them almost every single time that I go to the store. Which results in close to 5 pints of different kinds of tomatoes on our counter on any given day. Which results in finding different ways to use them up at any given moment, most often being the classic caprese combo with fresh basil and mozz slices. In keeping true to my burrata obsession, though, I went with that instead of regular fresh mozz because the freshness of these tomatoes deserved that extra special creaminess. Anyone else on board with this?
I’m thinking it’ll be the perfect thing to take to the big BBQ we’re heading to on Monday. Or Tuesday. Or any other day next week because we basically have plans to do that in one way or another every single day. What are your plans next week?!? Will you be outside eating and drinking in the sunshine with loved ones? I’m really hoping that the week goes sloooooooooow. Because so far, this summer is flying by and it makes me feel sort of sad because this time of year normally goes the slowest. And if the slowest time of year is starting to go as fast as all other times, well that’s just not good. I’m still looking for a magic wand to fix that part about life…

Burst Summer Tomatoes with Burrata and Basil
- 4 pints assorted cherry tomatoes
- drizzle of olive oil
- salt and pepper to taste
- 6 large basil leaves, sliced thin
- 8 ounce package of burrata
- 1 loaf crusty bread
- Preheat oven to 425 and place the tomatoes on a large baking sheet or into a large cast iron. Drizzle with the olive oil and toss with a generous pinch of salt and pepper.
- Roast tomatoes for about 15-20 minutes, or just until they burst, tossing halfway through. Remove from oven and gently toss with 1 pint of fresh cherry tomatoes and the basil.
- Serve with crusty bread and burrata. ENJOY!
